Natural Drying.

Staves undergo seasoning in a distinctive microclimate for a minimum of 24 months, allowing for an extended and controlled period of maturation. Outdoor, natural air drying plays a crucial role in this barrel production process. 

During this outdoor drying phase, the wood fibers tighten through dehydration. Exposure to the elements, including sun, rain, and snow, is a deliberate part of the process. These natural elements play a significant role in extracting harsh phenolic compounds from the wood. This extraction process is essential, as it helps to refine the wood and eliminate undesirable elements that could impact the final product. 

Furthermore, this exposure to outdoor conditions enables the wood to develop its complex aromatic character.
